This week on The Whiskey Trip Podcast, Big Chief takes listeners on a ride to Kentucky and chats with Tripp Stimson, Director of Distillery Operations & Chief Whiskey Scientist for Barrell Craft Spirits.

Tripp takes the Big Man on a ride learning about the history of Barrell Craft Spirits and their unrelenting drive to break the status quo of whiskey by blending products that explore different distillation methods, barrels, and aging environments.

In the first half they start the show with Barrell Foundation Bourbon which is a 5-year old, 100 proof blend of four separate whiskies. These four whiskies have a derived mash bill of 73% corn, 23% rye, and 4% malted barley.

To take the listeners into the break Big Chief pours a dram of their Barrell Bourbon Cask Strength, Batch 35. At 117.5 proof, it has a light nuttiness note to it. It’s a blend from three different whiskies from Tennessee, Indiana, and Kentucky.

To close out the show, Tripp and Big Chief sip on a Barrell Craft Spirits Cask Strength Rye. A blend of six different whiskies, with the oldest being a 14-year old Canadian. With a derived mash bill of 89% rye, 7% corn, and 4% malted barley that gives it a salted apple taffy note.

This ride on The Whiskey Trip showcases a the art of blending and finishing whiskey to be something new and innovative.
